Eggplant Parm

Best Eggplant Parmesan I've ever had. Crispy paper thin slices of eggplant smothered in the best marinara sauce on the eastern end of Long Island. Just the right amount of home made mozzarella. This is a once a week treat in my house. Delish!!!
